                                   Salted Caramel Ice Cream INGREDIENTS: Yield: About 1½ pints 1 ¼ cups granulated sugar. 2 cups heavy cream 1 cup whole milk ⅛ teaspoon fine sea salt 6 large egg yolks ¼ teaspoon salt PREPARATION: Step 1 In a medium pot over medium heat, melt ¾ cup sugar with 3 tablespoons water, swirling skillet frequently, until sugar turns mahogany brown in color (it should be almost but not quite black). Step 2 Add heavy cream, milk, remaining ½ cup sugar and the salt; simmer mixture until caramel melts and cream mixture is completely smooth. Remove pot from heat. In a separate bowl, whisk yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream.                               Dairy Fairy Chocolate Pudding Ingredients: 3   tablespoons   cornstarch 2   tablespoons   water 1 ½   cups   soy milk ¼   cup   white sugar ¼   cup   unsweetened cocoa powder ¼   teaspoon   vanilla extract Directions: Mix cornstarch and water together in a small bowl until a paste forms. Combine soy milk, sugar, cocoa, and vanilla in a large saucepan; stir in cornstarch paste until well combined. Cook over medium heat, stirring constantly, until boiling. Continue to cook and stir until mixture thickens, 3 to 5 minutes. Remove from the heat and let cool for 5 minutes; pudding will continue to thicken as it cools. Cover and refrigerate until completely cool, 1 to 2 hours. Tips: I sometimes use ground chocolate instead of cocoa.

Combine strawberries, milk, cream, sugar, vanilla, salt, and food coloring in a large bowl.
